I have a set of twin SUs (presumably they’re HS2) on a AEG 347 inlet, would they be suitable for this type of build with the spec mentioned earlier?

Probably too late to the party here, but anyways,,,,,
I'll grab my tin hat here and say - proceed with caution. I say that in regards to your wallet.
Do your sums before starting down the path of small bore engine modifications, for cost vs result (and don't just look at the peak HP figures here), don't forget to throw on top a 1 - 2 hour rolling road session to get the fueling and sparks all happening the right way too.
It's very easy to spend more than what you would have on building up a 1275 that gives similar peak HP results, but usually better results under that peak. While the bottom end of the small bore engines aren't weak or fragile in any material way for most uses, the 1275 does have bigger bearings and so should (and usually does) last longer.
