As far as I'm aware there are no videos for the 3 synchro box in particular, but assuming you have previously selected the right bits and have the exploded views present in AKD3509 (available from the MK1 site), the procedure is pretty much the same as for the 4 synchro.
You do have videos for the 4 synchro on youtube, both by Minimania (remote box IIRC) or rod change by Bill Solis in one of those Ultimate DVD series. Have a look here:

Some tips I could give you from the top of my head are:
1) Fit the detent plunger and spring for the reverse rod - first thing! If you leave that out, it's a full strip down to fit it.
2) Make sure the selector forks screws tips are sitting well in the rods blind holes and tight with their lock nuts to avoid coming undone.
3) Use lube or grease to hold the 2nd / 3rd gears rollers (no caged bearing like on 4 synchro) to fit the gears over them.
4) Make sure the 2nd gear has the 2 half moon pieces that prevent the rollers to come out, lock on the first synchro hub and destroy your box/engine.
5) Make sure you have the right (B type) first synchro hub. In doubt, post a picture.
6) When pressing the first motion shaft bearing don't do it against the synchro coating, use a steel pin in the small inner bearing hole or something else like in the following picture... but don't press it against the edge of the synchro cone.
7) Follow all the tolerances in your haynes / workshop manual and you will not be wrong.
