Thermostats & covers

I have some questions about these...
My 1962 Austin 850 has an early flat type thermostat cover with a bellows type thermostat similar to 11G291 listed in the Somerford catalogue (as superseded). The thermostat in there is very old and doesn't function anymore due to a hole in the little wound tube. I'd like to know if one can replace the bellows thermostat with a later wax type that's commonly available while still keeping the original thermostat cover. Would the new thermostat affect the flow of water at all under the flat cover?
If it's a bad idea to use the early cover/late thermostat combo, I'd be keen to get a bellows type thermostat but none of the usual suspects seem to list them. Any leads on where I might find one?
