I have had the same problem for a while - 4 pot alloy calipers and vented 8.4 discs. I think I have finally found the reason. I bled the system 1000 times, and still the same.
I bleed the system with easibleed and the pedal is rock solid. I roll the car a yard (metre) along the garage floor and the pedal goes half way down. Next pump it's fine again. If I leave the car still for a week and try the pedal once a day, it is always rock solid. Move the car forward a couple of feet, and down it goes again.
What I found was a loose centre not on the CV joint. This allows the disc to move/play, pushing the pads slightly open. The solution is obvious. I actually bought a repair kit, replaced bearings and it's now OK.
