At the moment I've got my oil temp sensor fitted between the pump and filter housing. (No cooler)
However, my oil temps are highish at the moment at 120C. I could use a cooler if the races get longer or ambient temperatures increases. The oil manufacturer claims that 140 degrees is OK, so not really a problem yet.
So, if fitting a cooler I take it that the sensor should be fitted before the cooler. This way I will see the maximum temperature reached, as this is what is dangerous if gets too high.
What do you guys do?
The reason for not fitting it in the sump, is because I really like that there is a magnet there.
If fitting a small oil cooler, how many degrees will this decrease the temperature? Anyone ever done back to back tests? If we're talking 40 degrees, then I cannot run one.
I was thinking about fitting a Metro oil/water heat exchanger but I'm not sure if my two core rad is capable of another heat source to cool.

I'm probably wrong, but my logic says it needs to be after the cooler - so you are monitoring the temp of the oil that is being fed to the engine.
Then if your cooler is 'over cooling' you can either swap if for another or adjust its open area with use of gaffer tape to block some of it off, obviously if it is under cooling you can fit a bigger one..

When at Brands Masters race I noticed that Nick Swift had fitted his temp sensor into the "speedo housing".... in from the front of the car just "under" the crank pulley... Makes it alot easier to change g'box and also route the capillare "cable"
Wonder if I dont have a photo of that somewhere..

Wouldn't the temperature in the sump, and before the cooler be quite similar? Yes, there is a pressure increase, but this will not increase temperatures very much I guess. (I cannot be bothered to calculate it. PV/T=C Oh well..
