How do gents
On my last engine the timing chain cover leaked like a good un so this time I want to make sure it doesn't. Should I use instant gasket and is there a correct torque setting or technique for making sure it is as good as it can get?

not a great believer in instant gasket,good clean surfaces,small smear of hylomar, and tighten evenly,
with a quality gasket,and replace oil seal of course

2 good clean surfaces, quality gasket, and good ole grease, works every time for me!

If you're using a standard steel timing cover check that the area around the bolt holes is flat.
If the bolts have been overtightened in the past it can distort the mating area under the bolts which in turn stops the gasket having an even seal all the way round the cover.
Standard quick fix if you haven't got a spare cover is a hammer and piece of suitable sized steel to act as a dolley to bash the holes flat again.
