As far as 'factory' Cams go, I would use a 567, Cooper 997 profile, rather than a 510.

I just have a 1275 cooper S cam laying around…will probably buy an aftermarket cam but was wondering if there was any pros or cons to the cooper s one (which I believe is the 510)

Iirc there were two 1275S cams, pre '66 and after.
Neither of them were anything special tbh.

The Innocenti 998 Cooper mk3 had a 510 S cam as std and was rated at 62bhp with out any other engine mods.
